Chicken and Double Jasmin Rice (Serves 4) Empty Chicken and Double Jasmin Rice (Serves 4)

1 tea bag
1 chicken bullion cube
1 TBL butter
8 chicken thighs (boneless, skinless)
1/2 cup chopped onion
3/4 cup Jasmin rice
1/8 TSP Black Pepper

Add tea bag to 1 1/2 cups hot water; let stand 1 minute. Remove tea bag. Add bullion to tea to dissolve. Heat large frying pan over high heat. Add butter. Add chicken; cook 3-4 minutes on each side to brown. Remove chicken from pan. Add onion to same pan. Saute 30 seconds. Add rice, pepper and tea.

Arrange checken in a single layer on top. Bring to a boil. Reduce heat to low; cover and simmer 25 minutes until the liquid is absorbed. Remove from heat. Let stand 10 minutes.

If you like chicken you will LOVE this recipe. The chicken is so tender that you don't need a knife!

4 servings: each serving 2 thights and 3/4 cup rice. Nutrition per serving:
398 calories, 4g protein, 11g fat, 31g carbs, 425mg sodium, 173mg cholesterol.
